To me, the quality of ingredients is the most important thing; let them do the talking. Dubrovnik has some stunning ingredients. Several of my favourites are the sea salt from Ston (even better than Himalayan salt!), Dalmatian olive oil and rosemary. I draw my inspiration from local gardens, seasonal flavours and the magnificent Adriatic Sea.
